YaYa's Special Greek Holiday Cookies (Kourabiedes)

Here is how you make three dozen mouth watering cookies. My children and grandchildren love these cookies! They have been a traditional favorite in my family for generations.
Ingredients
2 ½ cups unbleached flour, sifted
½ cup sifted confectioner’s sugar
½ cup sweet unsalted butter
1 tablespoon vanilla
1 tablespoon Amaretto liquor
1 egg yolk
Extra sifted confectioner sugar
Soften sweet butter to room temperature, and then whip about 25min. in an electric mixer until butter is white and fluffy.
Add sifted confectioner sugar, egg yolk, vanilla, and amaretto.
Mix well.
Add sifted flour and beat until dough is easy to handle.
Shape dough into walnut shaped balls and place on an un-greased cookie sheet.
Bake in a 350 degree oven for 15 to 20 min., until just lightly brown around the edges.
Cookies may have a crack on top, this is normal.
When done, have a bowl of sifted confectioner sugar ready and immediately roll each warm cookie in the sugar and place on a tray or rack to cool.
Do not wait until cookies are cool to roll in sugar.
